Chef Tony Bettencourt revels in the Beauty of the Beast at Tomasso Trattoria's heritage breed pork-themed dinner on Friday, August 17th.

The five-course menu features Six Spotted Berkshire pork (raised 100% on pasture at Newman Farm, a Certified Humane Raised and Handled farm in Myrtle, Missouri) in courses like pork terrine with an apricot mostarda; and chitarra pasta with pancetta, mushrooms and sage. Bettencourt welcomes special guests Patrick Martins and Sarah Obraitis from Heritage Foods USA, who'll be on hand to talk about their commitment to supporting small family farms and sustainably raised heritage foods.
